Maple Cheescake with Chocolate Chip Pumpkin-Bread Crust




Just kidding, it's not a crust at all.  It's actually just bread on the bottom.  And holy shitballs, is it good.  

Here is the recipe: 


  • 1 can pumpkin (not pumpkin pie mix)
  • 1 egg
  • 1/4 C oil
  • small amount of mini-chocolate chips (opt)
  • 1/2 C sugar
  • 1 tsp maple extract
Mix that bitch up with an electric mixer.  
 
Then sift together these items in your little metal strainer or sifter: 
  • 1 1/2 C all purpose flour
  • 1 tsp baking powder and baking soda
  • 1 tsp cinnamon

Bake at three-fitty for 35 min in a springform pan.  Greased on the bottom only.  COOL THIS SHIT BEFORE ADDING THE CHEESECAKE LAYER.  I left mine overnight.  

Then, get out your electric hand mixer again, after washing off the beaters (because god knows you licked them)
  • 4 pkg of cream cheese
  • 3/4 C sugar
  • 1 TBSP maple extract
Mix with mixer again, then wait to lick the beaters until you add: 

  • 1 C hot milk mixed with 1 TBSP gelatin (which is one package of Knox)
Now, mix again, then lick those beaters clean because YUM!!  Then use your rubber spatula to pour it on top of the bread in the springform pan and put in fridge for 3+ hours.  

Then get all Golden Girls style and have a cheesecake night!!  

You don't like maple?  Use pumpkin pie spice extract (it's a real thing, I saw it today!).  Or use vanilla.  Or use 4 bananas instead of the canned pumpkin for banana bread cheesecake.  The possibilities are endless.
