Grandma's Mac and Cheese


 

So my mother didn't make this up.  I don't think.  She's always made this and is so proud of herself when she does, but then again, she had a right to be.  It's DAMN delicious!  Who cares who made it originally (I'm assuming it's a Velveeta recipe), now you can write it down to have it as your go-to mac and cheese and tell everyone it's your recipe.  Whatever you do, just make it!


  • 1/4 C flour
  • 3 T butter
  • 1 C milk
  • 8 oz Velveeta or generic velveeta style processed cheese
  • 2 C elbow mac
  • 1 package of Ritz style round crackers, smashed

Preheat oven to 350.  Cook yo mac up.  Melt butter in a saucepan, whisk in flour, and slowly pour in milk (a roux, my dear, this is a roux).  Bring to a boil and cook until thick.  Then add in cubes of that cheese brick.  Stir until smooth.  Add macaroni.  Put in an 8x8 pan.  Put crumbled crackers on top.  Bake for 20 minutes.  It's actually pretty cheap, if you get Aldi brand or some other generic cheese loaf.  And it's soooooo good!
