Oh.  My.  Freaking.  God.  Is.  This.  Good.  

For real, yo.  This is best bread I've ever made or ever eaten.  Rather than traditional banana bread that tastes like it's laden with sugar (and is heavy as fuck), this one is is still laden with sugar, but is masked behind all the delicious goodness inside!!  

If you want to try something amazing, try this today!  You will not be let down.  And mix it up with what you like!  Experiment with different flours, fruits, and whatnot until you create the perfect bread (though this recipe is pretty perfect as-is!).  When I made this, I tripled it and made three loaves and had bread forever!  Great with margarine or even peanut butter.  But it's also great plain!!


Banana Oat Bread

3/4 C milk

1/2 C quick cooking oats

1/2 C packed brown sugar

1-2 bananas, mashed

1/2 C dried cranberries (or other fruit) (I use an entire bag of dried cranberries for 3 loaves)

1/2 C seeds (mixture of sunflower, pepitas, etc.)

2 T oil

1 1/2 t orange zest (or 1/2 t dried orange peel)

1 1/2 C flour (I make 3 loaves and triple this recipe and use 3 C of whole wheat flour and 1.5 of plain)

1/2 C flax seed or oat bran

1/2 C wheat germ

2 t baking powder

1 t gr. cinnamon

Mix and bake at 350 in a loaf pan for 45-50 minutes until knife inserted comes out clean. You can sprinkle more oats on top of each loaf before baking.  Let cool before slicing.  Can be stored in the fridge for around a week.
