These bean burgers hold together so well that people will think you're serving them cookies!! They taste AHHHHMAYZING too! Filled with whole grains, veggies, beans, and deliciousness, you'll wonder why you've ever eaten a store-bought bean burger!! And the best part is that they do not fall apart and bake up like cookies! Here is the recipe:
- 2 C quinoa cooked with 4 C water (I buy mine at Aldi) for 15 min (remember to rinse before cooking!)
- 1 sweet potato cooked in microwave (I sometimes use a bag of frozen chopped sweet potatoes from Walmart)
- 3 cans of black beans, drained and rinsed
- 1 C whole wheat flour (if you don't use enough flour they will fall apart)
- shredded carrots
- frozen corn
- whatever else you like (kale, spinach, etc.)
- Salt, pepper, and garlic powder (I added chili powder, garlic powder, and smoked paprika, yum!). But I am on a bland diet, at the moment, and I don't put any seasonings on them except salt and if you slap a piece of cheese on them, they still taste great!)
Mash all together and form into patties and bake on silicone mat at 350 degrees for 30 min. Flip (but only flip when you can pull them off the mat easily and they are shiny on one side--if they do not come off easily, they are not done), cook for another 20 min after flipping, or until done (not mushy and doesn't fall apart). Total cook time is usually around 50 min to an hour, but sometimes a little more due to how thick they are (you can make yours thinner or smaller if you like).
Serves: 20 (196 calories each patty--to calculate a smaller burger's calories, take my number, multiply it by 20, then divide by how many patties you make in total).
UPDATE: Instead, cook them at 375 degrees and they'll be done in less time and are better! Also, you can cook your quinoa in the pressure cooker: 2 C quinoa, rinse (otherwise it will taste nasty and bitter), 3 C water, and cook in pressure cooker for 4 minutes.
