Have you ever had Kozy Shack rice pudding? This tastes similar! Damn this is soooooo good!
Get yourself some of this:
-2 C water
-1 C rice (short grain works the best, but any will do)
-4 cups milk (any kind, as long as it’s not nonfat)
-nutmeg and cinnamon to taste (around 1/4 t each)
-1/2 cup sugar
-2 t vanilla extract
-Ground cinnamon for sprinkling
Then do this:
- Cook yo rice up (don't overcook). I like using my instant pot, but you can use a pan on the stove.
- Combine the milk, sugar, cinnamon and nutmeg, and cook until simmering. Then pour it over the cooked rice.
- Cook until the rice has pulled most of the liquids into it, stirring now and again. At least 15 minutes. It gets thicker in the fridge.
- Then pour into a casserole dish (or whatever you have), top with cinnamon, and put in the fridge until cold. Unless you like it hot. Then maybe just eat it!
Tip: My dad used to eat his with grape jelly. Sounds strange, but it's quite good!
