Got a bunch of leftover veggies in your fridge? Use 'em up!!
Get yourself some of this:
-2 cans tomatoes (your choice)
-an onion, chopped
-carrots, chopped
-celery, chopped
-kale
-fresh green beans
-6 C chicken broth (or equiv. water/ lo-so bouillon)
-fresh cabbage
-Chicken, sausage, or whatever meat you want (precooked)
-beans (black, garbanzo, cannellini, etc.)
-Italian seasoning (to taste)
-russet potatoes, cleaned and chopped
-chopped squash pieces
-bacon
-salt & pepper to taste
-thyme (to taste)
-garlic powder (to taste)
-oilThen do this shit:
Now, these are suggestions above, add what you have and leave out what you don't have or like.
In a large soup pot, heat up a T of oil and cook onion till soft and add garlic, but don't let it brown.
Add the rest of the veggies and saute a bit to release flavor.
Put all in a crockpot and cook on low 7-9 hours. Just before serving, mash the potatoes a little bit with a masher.
