Chipotle Chicken Sweet Potato Bowl




Get yourself some: 


-instant brown rice or steamed rice of choice
-chicken (seasoned with Mrs. Dash Chipotle seasoning or seasoning of choice--Mrs. Dash changed their recipe and now this is really, really spicy)
-peas
-black beans
-wilted spinach
-roasted sweet potatoes
-cooked fresh tomatoes
-corn
-oil or butter

Then do this: 

Dice sweet potatoes and coat in oil in a bowl.  Pour onto sheet pan and bake at 400 degrees until done.  Check and stir every 20 min. checking for doneness.  Meanwhile, cook chicken tenders or boneless skinless thighs in oil, sprinkled with Mrs. Dash.  After done, break chicken into pieces and add tomatoes and spinach and corn.  Cook rice.

Layer all into large bowls and top with sauce.

You can top with BBQ sauce or sauce of choice when assembled.
