Breakfast Sweet Potato Sausage Hash




Soooo good!  Takes a little while to cook the potatoes, but it's worth it!

Ingredients:

  • a few sweet potatoes, washed and cubed very small, skins on
  • 1 pound of homemade sausage (or store-bought)
  • onion, chopped small
  • mushrooms, chopped
  • olive oil
  • Mrs. Dash chipotle seasoning (update: they changed their recipe on this and now it's super super spicy! If you don't like spice, maybe try a store version of this seasoning to see if it's milder)
Cook up your sausage in a small pot.  Pour some olive oil in your non-stick pan and saute potato cubes, onions, and mushrooms. Cook until soft (around 20-30 min). Then add some of the Mrs. Dash, and then add your sausage.  And done!  Yum!
