Now, if you're awesome like me, you will have a Valli Produce in your area. One sec and I will check and see if this is a global chain or not....NOPE! Dangit. It's Chicago Area only....well, then you can be the person who says to your produce manager at your local grocery store, try this:
Get up all the ALMOST EXPIRED loose potatoes of random kinds and put them in a bag and sell them for $1.50 a bag. That way, patrons can go buy the bag and fix the potatoes that night. That's how I got my mixed assorted potatoes today, that included PURPLE potatoes. I can't afford that shit otherwise. And they are GOOOOOD! Ever had them? I not, try them if you can. Yummy!
But use whatever random leftover potatoes you have that you haven't used up yet: russet, red, yellow, purple, fingerling (again, who can afford fingerling??), purple, sweet, whatever. Any size, if big: cut into little pieces.
Throw them all into a roasting pan or a deeper 9x13 (or whatever size you want), drizzle with whatever oil you have on hand (butter yes, margarine, no) and roast at 425 for 30 minutes, stir, then roast until done (keep checking every 10-15 min or so, every 5 near the end). You can roast at 350, but it will take longer. Cut your pieces as even as you can so you can get them all done at once. If they get a tad burned on the sides of the pan? GOOD! Because YUM!! Mmmmmm so tasty......
That's it. Throw in some carrots, celery, or whatever else you got you need to use before it goes bad. Maybe some tomatoes? Should taste okay, not sure though. Try it and see if it is! Or use a separate pan for tomatoes, zucchini, celery, and other veggie and leave the potatoes alone :) Carrots though? Are always good with potatoes. Esp. sweet potatoes (which is a staple at my house: a bag of carrots and lots of sweet potatoes cut up and roasted!).
Valli produce does this with ALL the fruits and veggies, not just potatoes: the $1.50 package of almost expired produce. See if your grocer will do the same! Makes it affordable for everyone to eat delicious fruit and veggies!
